Sweet Summer Salad
Ingredients

| Cabbage, chopped | 0.5 lb | 1 lb | 2 lb | | Cider vinegar | 2 Tbsp | 4 Tbsp | 8 Tbsp | | Olive oil | 1 Tbsp | 2 Tbsp | 4 Tbsp | | Carrots, shredded | 1 cup | 2 cup | 4 cup | | Apples, cut into thin slices | 0.5 cup | 1 cup | 2 cup | | Raisins | 0.25 cup | 0.5 cup | 1 cup | | Peanuts, unsalted, crushed (optional) | 0.25 cup | 0.5 cup | 1 cup |
Directions
- 1. Wash and dry cabbage and chop.
- 2. Whisk vinegar and oil in serving bowl to blend.
- 3. Add carrots and cabbage. Toss. Cover and refrigerate for at least two hours.
- 4. Add apples, raisins and peanuts (optional). Toss.
