Ingredients

Potatoes (any type)3 6 12
Mixed vegetables, canned or frozen1 cup2 cup4 cup

Cheddar cheese, shredded2 Tbsp4 Tbsp8 Tbsp

Directions

  1. 1. Poke holes in top of all potatoes.
  2. 2. Microwave potatoes (uncovered) for about 3 to 4 minutes on high power.
  3. 3. Cut the potatoes in half.
  4. 4. Top each potato half with veggies, salsa and cheese. Microwave for 30 seconds to melt the cheese.
