Polka Dot Pasta

Ingredients

Pasta, whole wheat, bowtie, dry1 cup2 cup4 cup
Tomatoes, chopped1 cup2 cup4 cup
Spinach, chopped0.5 cup1 cup2 cup
Carrots, chopped1 cup2 cup4 cup
Broccoli, chopped0.5 cup1 cup2 cup
Pepper, black0.5 tsp1 tsp2 tsp
Olive oil1 Tbsp2 Tbsp4 Tbsp
Vinegar, distilled1 Tbsp2 Tbsp4 Tbsp
Parmesan cheese, grated1 Tbsp2 Tbsp4 Tbsp

Directions

  1. 1. Cook pasta as directed on box.
  2. 2. Allow pasta to cool.
  3. 3. Chop vegetable. Mix together in large bowl.
  4. 4. Mix oil and vinegar and coat pasta.
  5. 5. Combine pasta and vegetables.
  6. 6. Top with pepper and parmesan cheese. Mix.
