Old McDonald Chicken

| Chicken, boneless, skinless | 1 lb | 2 lb | 4 lb | | Onion, diced | 0.5 cup | 1 cup | 2 cup | | Zucchini, diced | 0.5 cup | 1 cup | 2 cup | | Mushrooms, sliced | 0.5 cup | 1 cup | 2 cup | | Garlic, minced | 0.5 clove | 1 clove | 2 clove | | Tomatoes, canned, chopped | 0.75 cup | 1.5 cup | 3 cup | | Parsley | 1 Tbsp | 2 Tbsp | 4 Tbsp | | Black pepper | 0.5 Tbsp | 1 Tbsp | 2 Tbsp | | Basil leaves, dried | 0.5 Tbsp | 1 Tbsp | 2 Tbsp |
Directions
- 1. Heat oil in large pan.
- 2. sauté chicken 3 minutes on each side.
- 3. Add onions, zucchini and mushrooms.
- 4. Cook for another 10 minutes, stirring occasionally.
- 5. Add garlic and allow to cook 1 minute.
- 6. Add tomatoes with juice to chicken and vegetables.
- 7. Add parsley, basil and black pepper.
- 8. Allow to simmer until chicken is no longer pink, about 20 minutes or more.

This dish can also be made in a crockpot or slow cooker. Put all the vegetables in the pot and allow to simmer on low for the day.
