Luigi's Lasagna

Ingredients

Mushrooms, sliced2 Tbsp4 Tbsp8 Tbsp

Broccoli, frozen0.5 cup1 cup2 cup
Cottage cheese, low-fat, drained1.5 cups3 cups6 cups
Parsley, dried0.5 Tbsp1 Tbsp2 Tbsp
Mozzarella cheese, grated6 Tbsp12 Tbsp24 Tbsp
Tomatoes, canned0.5 cup1 cup2 cup

Directions

  1. 1. Cook lasagna as directed.
  2. 2. Heat vegetable oil. Add zucchini, mushrooms and onion. Sauté for 3 minutes. Remove from heat and set aside.
  3. 3. Cook broccoli as directed. Set aside.
  4. 4. Combine cottage cheese and parsley.
  5. 5. Spread vegetables on the bottom of a 12x20x 2 1/2 pan for 25 servings (9x9x2 for 12 servings). Follow with a layer of noodles, a layer of cottage cheese, another layer of vegetables and a layer of mozzarella.
  6. 6. Repeat for the second layer.
  7. 7. The third layer is the last of the lasagna noodles and a layer of the canned tomatoes.
  8. 8. Cover with plastic wrap and foil.
