Island Fun Pasta Salad

Ingredients

Pasta, whole grain, corkscrew1 cup2 cup4 cup
Romaine lettuce, shredded0.5 cup1 cup2 cup
Pineapple chunks, fresh or canned0.5 cup1 cup2 cup
Mango, peeled, sliced0.25 cup0.5 cup1 cup
Red cabbage, shredded0.25 cup0.5 cup1 cup
Onions, chopped0.25 cup0.5 cup1 cup
Yogurt, low-fat plain or vanilla0.5 cup1 cup2 cup

Directions

  1. 1. Cook pasta as directed on package. Drain.
  2. 2. In a small bowl, combine yogurt and juice of the orange.
  3. 3. Combine lettuce, pasta, pineapple, mango, cabbage, and onion in large bowl.
  4. 4. Pour dressing over. Mix until all parts are coated.
