Ingredients

Tortillas, whole grain, 8"6 12 24
Chicken, boneless, skinless, cut into strips1 lb2 lb4 lb
Tomatoes, diced0.5 cup1 cup2 cup
Onions, chopped0.5 cup1 cup2 cup
Romaine lettuce, shredded0.5 cup1 cup2 cup
Barbeque sauce0.25 cup0.5 cup1 cup
Cooking spray- - -

Directions

  1. 1. Coat large, non-stick skillet with cooking spray
  2. 2. Coat chicken with barbeque sauce
  3. 3. Place chicken strips into pan. Cook about 3 minutes on each side.
  4. 4. Add barbeque sauce to chicken.
  5. 5. Simmer over medium heat for 15 to 25 minutes until chicken is cooked all the way through.
  6. 6. Warm tortillas in microwave oven.
  7. 7. Combine tomatoes, onions and lettuce in bowl.
  8. 8. Place 1/2 oz chicken and 1/4 cup vegetable mixture on each tortilla.
