Cowboy Quinoa
Ingredients

| Quinoa | 0.75 cup | 1.5 cup | 3 cup | | Water | 1.5 cups | 3 cups | 6 cups | | Cider vinegar | 1 Tbsp | 2 Tbsp | 4 Tbsp | | Olive oil | 2 Tbsp | 4 Tbsp | 8 Tbsp | | Black beans, canned, rinsed | 30 oz | 60 oz | 120 oz | | Corn, frozen | 1 cup | 2 cup | 4 cup | | Cherry tomatoes, halved | 0.5 cup | 1 cup | 2 cup | | Onions, sliced | 0.25 cup | 0.5 cup | 1 cup |
Directions
- 1. Combine water and quinoa in small pan and bring to boil. Cover and let simmer, about 12 to 15 minutes (until quinoa is tender).
- 2. Whisk together oil and vinegar. Pour over quinoa.
- 3. Add beans, corn, tomatoes, and onion.
- 4. Stir.
