Ingredients

Bowtie pasta2 cups4 cups8 cups
Olive oil5 tsp10 tsp20 tsp
Corn kernels yellow, frozen0.5 cup1 cup2 cup
Edamane, peas or snap peas, frozen0.25 cup0.5 cup1 cup
Bell pepper, red0.25 cup0.5 cup1 cup
Carrots, chopped or shredded0.5 cup1 cup2 cup
Parmesan cheese, grated0.25 cup0.5 cup1 cup

Directions

  1. 1. Cook pasta as directed on package.
  2. 2. Drain. Let cool.
  3. 3. In a large bowl, mix pasta, corn, edamame (peas or snap peas), bell pepper, and carrots.
  4. 4. Drizzle with olive oil. Toss to coat.
  5. 5. Add parmesan cheese. Toss again.
  6. 6. Serve 1/2 cup servings.

Food For Thought

Allow kids to pick colors they would like to try and add vegetables from each color group to change the look and taste of this dish. Bowties can also be served for snack.
