Boat Burgers

Ingredients

White beans, canned0.5 cup1 cup2 cup
Parsley leaves0.25 cup0.5 cup1 cup

Directions

  1. 1. Preheat oven to 375° F. Spritz baking pan with cooking spray and add fish. Bake until flaky, 7 to 10 minutes.
  2. 2. In food processor purée white beans, parsley and bread crumbs.
  3. 3. Place mixture in bowl with egg and crumble in fish. Mix until incorporated.
  4. 4. Form small (1-1/2 oz) patties.
  5. 5. Coat oven-proof skillet with cooking spray over medium heat. Add burgers. Cook about 5 minutes on one side. Flip and cook 5 minutes longer.
  6. 6. Serve each patty on 1/2 bun with lettuce and tomato.
