Beautiful Butterflies

Ingredients

Chicken, boneless1 lb2 lb4 lb
Mayonnaise, light0.5 Tbsp1 Tbsp2 Tbsp
Green onions, chopped0.25 cup0.5 cup1 cup
Tomatoes, chopped0.5 cup1 cup2 cup
Carrots, chopped1 cup2 cup4 cup
Tomatoes, cherry, halved0.5 cup1 cup2 cup
Bread, whole grain7 slices14 slices28 slices
Baby carrots0.5 cup1 cup2 cup

Directions

  1. 1. Place chicken in skillet with enough water to cover. Bring to a boil. Reduce heat and allow to simmer for 12 to 14 minutes. Drain and let cool.
  2. 2. Shred chicken and place in bowl. Add carrots, tomatoes, green onions and mayonnaise.
  3. 3. Spread mixture over bread slice. Cut into triangles.
  4. 4. Arrange triangles with points facing each other to look like butterfly wings. Place baby carrot in center.
