Beautiful Butterflies
Ingredients

| Chicken, boneless | 1 lb | 2 lb | 4 lb | | Mayonnaise, light | 0.5 Tbsp | 1 Tbsp | 2 Tbsp | | Green onions, chopped | 0.25 cup | 0.5 cup | 1 cup | | Tomatoes, chopped | 0.5 cup | 1 cup | 2 cup | | Carrots, chopped | 1 cup | 2 cup | 4 cup | | Tomatoes, cherry, halved | 0.5 cup | 1 cup | 2 cup | | Bread, whole grain | 7 slices | 14 slices | 28 slices | | Baby carrots | 0.5 cup | 1 cup | 2 cup |
Directions
- 1. Place chicken in skillet with enough water to cover. Bring to a boil. Reduce heat and allow to simmer for 12 to 14 minutes. Drain and let cool.
- 2. Shred chicken and place in bowl. Add carrots, tomatoes, green onions and mayonnaise.
- 3. Spread mixture over bread slice. Cut into triangles.
- 4. Arrange triangles with points facing each other to look like butterfly wings. Place baby carrot in center.
